Our story

Born from Jerusalem's hills,
shaped by time

Ensapir is crafted in Even Sapir, perched on the western slopes of the Jerusalem Hills overlooking the Sorek Valley. The crisp mountain air, intense summers, and cool nights accelerate the interaction between spirit and oak, imparting a distinct and robust character to the whisky.

The name is inspired by 'Ein Sapir'—the natural spring that flows through the village where our distillery stands.

We filled our first casks in January 2025. Each small batch is distilled and matured entirely on-site, guided by hand and time, and will only be bottled when it reaches absolute perfection.

Step into the heart of our craft in Even Sapir, nestled in the Jerusalem Hills and bordering Jerusalem itself. Join us for an immersive journey through the distillery and brewery, from the active fermenters and stills to our quiet maturation room. Conclude your visit with a curated guided tasting featuring our evolving Ensapir single malt, our bourbon-style Ercoqen whisky, and a flight of our signature craft beers. The tasting is accompanied by premium refreshments, with an option to upgrade the experience to include a full curated kosher meal (meat or dairy).

From cask to bottle

How we make our whisky

Every step happens at our distillery, by hand.

Mashing and fermentation

Malted barley is milled and mashed, and the wort ferments in our stainless steel tanks into a rich wash, fully prepped for distillation.

Charring the casks

We meticulously steam and char our own oak casks on-site. The deep layer of char within the wood imparts the whisky’s signature color and sweet, robust character.

Maturing in the hills

The spirit matures in selected wine casks, experiencing the dynamic shifts of hot summers and cool winters. This unique mountain climate accelerates the interaction with the wood, granting each cask its own distinct profile.

Papa Distillery

Ensapir and Ercoqen are meticulously crafted by Papa Distillery, an artisanal distillery and boutique brewery nestled in the Jerusalem Hills. Alongside our premium spirits, we proudly brew Papa Beer, an acclaimed range of eight specialty craft beers. The same unwavering dedication, select casks, and profound curiosity go into every drop we produce.

Our journey began with Ercoqen, an exceptional bourbon-style single cask whisky that reflects our early distilling heritage. While our creative focus has now naturally evolved towards perfecting the Ensapir single malt, Ercoqen remains a proud testament to our roots.
